The Dish: Shrimp Tacos

Ingredients:

10 medium shrimp

2 oz. Aioli

2 Tbs. toasted coconut

1 Tbs. pickled jalapeños (or to taste)

2 Tbs. micro cilantro (or regular)

2 Tbs. black sesame seeds (toasted)

4 small flour or corn tortillas

Sriracha Aoili

2 oz. Sriracha sauce

6 oz. mayonnaise

2 Tbs. lime juice

1 pinch of salt to taste

2 lime wedges

Method of Preparation:

-Start by making the Sriracha Aioli. In a bowl, add mayonnaise, Sriracha sauce, fresh lime juice, & kosher salt. Stir well and set it to the side.

– Dip peeled, deveined shrimp in corn starch to dry them. This will make the shrimp nice and crispy. Next, dip them in Tempura batter.

– Fry the shrimp in soy oil at 350 degrees until they’re golden brown- usually about a minute or less. Drain on a paper towel.

– Put tortillas on the stove top and get them hot about 40 seconds on each side.

– Toss the fried tempura shrimp in the Sriracha Aioli and cover well.

To Plate:

Put the Sriracha Aioli shrimp in the warm tortilla shells. Garnish with toasted coconut, pickled jalapeños, black sesame seeds, micro cilantro and accent with a lime wedge.
